Carrot Soup (Winter Special)


This easy recipe for carrot soup is a good way to use a bag of carrots that have been neglected in your fridge. Carrots are cooked along with ingredients such as onions, garlic, and fresh herbs before they are pureed into a clean, silk soup that is tasty for meals or filled for lunch.

Chicken Broth or Vegetable Broth

Method:

Step#1:
Warm the oil and butter in an oven over the moderate flame till the butter melts. Add the onion and celery; cook, stirring occasionally until lightened, for 4 to 6 mins. Add the garlic and parsley; cook, stir, until fragrant, approximately 10 seconds.

Step#2:

Mix the carrots. Add the water and broth; bring to a boil over high temperature. Decrease the heat to keep simmering and cook till very soft, approximately 25 minutes.

Step#3:

Puree the soup in chunks in a mixer until it is smooth. Stir after adding salt and black pepper.
